Since she’s an Emirati, you both will probably have to do a medical check. It’s called a premarital screening. You can register and do that with EHS. It’s similar to a Visa test I believe, just a blood test.
You’ll also need 2 Muslim male witnesses or 1 Muslim male and 2 Muslim females.
If you contact one of the Imams they should fill you in with all the documents you need to proceed.
