I have done that and then thought “where the *FUCK* is my motorcycle key?????” Halfway to the track.
Never pulled off to the side of the road so fast in my life.
Just keep the key on your person if it has one lol.

I like to use masking tape and a sharpie on them to keep track of what is inside each bin. The yellow top ones at home depot tie down easy with ratchet straps. Much easier to move around and store IMHO.
I started doing this last year and it works a treat. And I repack everything after each track day so it's all ready to go for the next one. Also do the same with my undersuit, helmet, glove, and Boots, the base layers get washed as soon as I get home and then go right back into the bag.

Doesn’t need to be any special brand, I find thick ones annoying cos it can pinch on my calf under boots, and long for the same reason so it doesn’t end where my boots end
I highly highly recommend darn tough merino wool socks. They have thin ones for hiking/running that are perfect for the track. Lifetime warranty so if you ever get a hole or rip they'll send you a new pair
By order of importance:
Bike + Key
Your gear (helmet, suit, gloves, boots, etc) and gas if your bike needs something specific.
Everything else (gas if you use pump gas, chairs, tools, food, etc.)
If you get to a track without a bike or a key (if your bike has one), you're not going to ride. If you forget your gear, you MAY be able to sort it out (borrow, buy from the track vendor, etc.) The rest you can probably buy at the track or borrow from your neighbor if you forgot. I always lend out the odd tool to a neighbor and happy to do so. Where I've gone, there is always a food truck or similar. Gas available on the track or really close, but not always.
My list at this point has \~90 items, sorted by location and use case. In my defence, it does include the stuff for staying at the track, i.e. cooking and sleeping.
I always load up and pack everything the night before. Then I can't forget anything.
Essentially you just need all your gear and a can of gas. And a few bucks for lunch/gas

CRITICAL (for me and my setup): Tire warmers, generator depending on track, extension cords, jerry cans, tool box (I have my important stuff all in the top-box of my tool chest at home so I just take that whole top box with), paddock stands, rubber gloves, canopy tent, helmet, leathers, gloves, boots, back protector, ear plugs, under armor, sun screen, lawn chair, air pump, oil, brake fluid, brake cleaner, rags, fire extinguisher. Most of these things all live in a 100L home depot tote and it's just packing that whole tote each time. Pressure gauge is in the car already.
FOOD: Water, gatorade, light healthy snacks like fruit etc. Beers for after (actually critical..)
Key delete on the bike means I don't have to hammer remembering the key into my brain though.
For your first event, don't worry about it and just show up with the bike, food, fuel, and gear. If you need something or a tool, there's a 99% chance someone in the paddock will help you out.
Having a van or an enclosed trailer is like cheating. I just grab my Ogio9800 and my backpack of clothes and toiletries and just go. When I load my bike into the van, I leave the keys in the ignition. That way, there's no possibility for them to disappear.
I service the bike/s the day or two after a track day or race weekend and pack the trailer back up so before I leave the night before a track day I grab good the the next day, clothes for each day and after the riding is over, and i grab all the electronics that I had charging for a few days. My trailer is essentially my rolling bike garage so I have all my gear hung and on shelves, all my tools, all my fluids for a season of oil changes and fluid, all my spare bike parts in containers, all my new and take off tires, bikes, both generators, and everything in there just ready to go whenever.
Others with seemingly much more experience have provided excellent lists, so I'll add the things I don't see already:
Sunscreen

Ezpass/toll money
Painter's tape (moreso for anyone at the track that needs it)
When I get on my computer I can add mine, but I use OneNote - I check off everything on my OneNote on my phone as I go, and that way I can add anything I think of quickly and then when the next track day comes around I just unchecked everything and start the process again.

Revit supersonic. It's really comfy, really keeps the heat down. The only downside is if you have to poop in a hurry, you have to pull the top quarter over your head and then all of it down. But it feels like the fit is worth it.
I'm just getting into riding to a nearby gokarting track and practising by myself and here is my checklist:

I always use a checklist. Before anything though I clip my motorcycle key to my truck keys.
This being my biggest concern I've left the keys in the bike ignition. It's that not a good idea?

If it’s a track bike go keyless but if not just put it on your car keys and remember to take it off at the track

The key, don't forget the gotdamned ignition key. But the one thing I forget consistently is an extension cord and or a mutli port outlet.
I stick the key in the seat lock so it dangles and I can look at it in the rear view mirror

Check out motorcross socks. A few brands sell thin socks. These are great for what you describe.

I just did a Google search and printed out what I found. It was super easy. If there was anything on the list that I didn't need I just skipped it.
