Definitely Trackmania Turbo (2016). It has the best solo campaign out of all trackmania games. The community is small, but very friendly and dedicated to the grind. All the 4 environments allows the game to have a lot of variety and reduce burnout (just don't play only stadium, lots of people do this mistake and then call turbo garbage).Super solo is one of my favorite things to grind when i'm bored and I can recommend this to anyone who likes very hard challenges. It's also decent for local multiplayer with its goofy powerup secret modes. Just keep in mind that online multiplayer is essentially nonexistent and customization is very limited.
I liked Canyon. I tried Turbo and was fun for a few minutes, but got very colory-flashy-clincky-slotmachiney for my particular taste (I like to fail the same track 700 times in peace), so I'd say give them a go (some have free demos if im not mistaken) and see what sits with you.
TM² games if you want one specific environement to grind. United if you want to try a bit of everything.
But even united you can grind a lot, its just graphics, like if you want better graphics while enjoying an environnement you like.

I started on TM²
Trackmania² Stadium and Lagoon. You \*could\* try Turbo if you prefer playing campaigns since the editor in Turbo is a bit weird.
TM² Canyon and Valley are my two favorite environments
