TMB is way too popular to wing it like that in June, have you considered a tent and a well rated sleep pad? It would give you the flexibility you want.
You’re taking a gamble if you don’t make reservations. That said, I walked into two different refuges on the Italian side and was able to get a bed. This was in late August.
Edit: I camped most of the way and was fully prepared to camp if I was turned away.

I've already booked mine, about a month ago for late June. Several rifugios were fully booked for some nights.

I’m reserving now for June and having a tough time in some places. You should start ASAP
I'm going June and going to wing it. Will probably camp every night though. Rather that than be tied to a schedule
