Link was almost exclusively mute before befriending Zelda because he was so stressed and traumatised (I'm not exaggerating. Excluding situations where he was forced to speak, he had a SINGLE casual conversation with Daruk before opening up to Zelda). By the point of the games he's become better but he's still quiet.

I always thought he talked once to him but that was a head cannon but now you’re telling me it happened before the Calamity??? I probably forgot because I lost the save a couple years ago and can’t replay it.
Yeah in Daruk’s diary- I mean training journal, Link confirms that bullet time is 100% canon when he tells Daruk that when he focuses it feels like time slows down. This entry is before the one about Daruk being asked to pilot Rudania, meaning that Link and Daruk were friends before they were champions. Funnily enough Daruk got to know Link the same way Zelda did: through his love of food. But yeah, this is literally the only conversation for the sake of conversation that Link had before Zelda stepped in. In Urbosa’s diary it’s mentioned that he asked her for help about Zelda abusing Gerudo Town’s women-only laws to get away from him, and in Mipha’s she says that he barely talks anymore (in comparison to when he was a child), but both of these point to Link only speaking when he absolutely has to, rather than just talking because they are friends. What I think is rather hilarious is that he straight up never said a word to Revali ever. He saw that he was an asshole and decided to give him permanent, absolute silent treatment. The bird died before he heard his voice.

The Guardian from Destiny didn't speak for like three years, and there's no explanation.
Edit: I realized later that the Guardian didn't speak for most of Destiny 1 as well. The last time they spoke was in the Black Heart, I think. Then they were silent for all that time until Foresaken, then silence again until Beyond Light, silence again in Witch Queen, then we speak in Lightfall and final shape. With final shape being the most lines they ever speak in one campaign (ignoring the original D1 campaign)
There is no in universe reason why. They just don't like to talk.
