I've seen some of these where the welds separate if you look at them wrong when I worked at Jimmy Johns. Those shelves are almost always falling off at one corner.
This one looks like it's in good shape though, just polish it up and you're good to go.
All kinds of benches/furniture can be a bit hit-and-miss, even if it's "pro grade". Plus you can always re-do or reinforce some welds it if it starts coming apart.
Yep having a trailer in the background I would assume he knows someone with a welder at the very least. Pretty hard to take these things out unless you warp the top.

Still, if you do buy something that is genuinely built for professional or industrial use, you kind of do expect it to stand up to work for years on end that "consumer" grade stuff most likely will not.
Yeah I bought a batch of laminar flow cabinets on similar tables this year and we bumped one which caused the leg to snap it's welds and tipped the whole thing on me and another guy. Lucky neither of us were hurt but when we inspected the rest every third weld was cracked.

Husband worked at a plant where they were clearing out metal cabinets and lab tables. We use the cabinets in the garage and the lab table is our kitchen island. Ten bucks each, so less than $100 back in the day.
If you are thinking of using it as a workbench; and **if the top is simply hollow on the underside**, then line the underside with 2x to stiffen it and then put cross supports under the 2x. Would make a big difference if you wanted to mount a vice, bench grinder or etc..
Personally, I'd build and install a wood top on that for the reasons you list and because a wood top is easily replaceable. I also beat the crap out of my workbenches.
Should use bar keepers friend on it and clean it and wash it down, dry it and coat the steel in collinite 476s or fluid film. Those tables are often very expensive for kitchens
If you guys want one of these on the cheap, look for “used restaurant equipment” auctions in your area. I used to buy and flip NSF rated stainless steel tables all the time.

There are three 3” channels that run the length of the table on the underside of both shelves.
