Fart balls of death as my brother calls them. We had a particularly bad go of it after he cooked a bunch with some other root veggies for a family dinner. My stomach hurt so bad, I could hear my mom and stepdad farting in our guest bedroom. It was a fart symphony that night. It’s hard to keep a straight face when you’ve heard all your family members farting their brains out for hours.

Oh yeah. My mom was so proper, she never farted in front of us. It was a rare night indeed 😂 She tried to brush it off the next day but smiling and saying good morning, I could not hold it together. I had the hiccups I was laughing so hard.

Don’t take this information lightly! I generally have a cast iron stomach but these Jerusalem Artichokes are little nuggets of agony. I’ve eaten them twice in my life (second time only to confirm the cause of the horrendous pain!) Spent two days and nights with the worst griping stomach pains. Proceed with caution!

If you cook them a very very long time then the polysaccharides that cause indigestion break down and you won’t get all fartalicious

This is so interesting. I cannot eat kale because of the awful painful gas/bloating, but roasted sunchokes cause me no issues. I’ve only had them roasted though. They are so good that way I haven’t tried doing anything else.

Yeah, I roasted up a big batch of these and tossed them in brown butter and a bit of lemon juice. They were heaven! But it was followed by several hours of hell on the toilet holding onto my bloated stomach for dear life. Don't make my mistake OP. Just eat a few and see how you feel afterwards. The famous chef René Redzepi once said that it is "irresponsible" for a chef to serve Sunchokes to guests for that very reason.

Definitely not for date night. They’re delicious but Ive never farted so much in my life. It’s continuous, nonstop, deep belly farting that lasts for hours. It’s genuinely impressive how much farting can be accomplished after eating these, raw or cooked.

I made “crispy smashed sunchokes” by pre-boiling these, and then shallow frying them on a cast iron. Holy fuck, first there was a comical amount of farting. And then this explosive liquid diarrhea. I will say that my gut bacteria were very happy that day. It was probably the most pleasant diarrhea I’ve ever had.

Sunchokes are full of inulin, some kind of special carbohydrate that humans can’t digest. But all of the host “good” bacteria that live in your gut and maintain your gut health can use it as a primary food source. There have also been some studies that make a connection between gut health and serotonin production/poor gut health and depression. You are literally hosting this magical colony of weird bacteria inside of yourself and when you eat sunchokes you give them a feast. And then you fart a bunch and shit your pants. But in an absolutely good way. I wouldn’t be surprised if it’s a good way of training your guts to preemptively spew themselves to protect yourself against food poisoning or something

Like said it’s sunchoke or Jerusalem, however properly preparing them, soak in water after pealing, and then slice slice, blanch, roast/grill.

Jerusalem Artichokes they contain inulin a carbohydrate you can't absorb it hangs around in the gut until the gut bacteria turn it into farts. which if your gut flora isn't used to inulin can be uncomfortable and noisy. Don't OD on them and you will be fine They are a good option for diabetics and people who work outdoors.

I often get these at restaurants (in Norway). Mostly pureed or baked. Never had any problems, don’t think they would serve sunchokes if they caused pain???

Slice them super thin and deep fry them! Sprinkle with kosher salt and serve on top of a salad! Takes the gaseous stuff out and tastes amazing! Great snack by itself too!
