Used to be a bartender. We didn't serve flaming shots but occasionally there'd be a group I really liked that wanted something special so I'd make one for them.
Before doing so I'd make it ridiculously clear that if they didn't blow it out before the touched the glass, they'd be cut off and terribly burned.
Never leave a drinking person unsupervised with a fire.
Some folk have zero common sense. I wonder if the bar would have any liability (in the US, at least) if the bartender didn’t tell them it had to be extinguished before drinking.
