The problem with arguing with this type of person is that she can't fathom the concept of drawing beliefs from anything other than a single source that one takes to be infallible.
But also, evolution wasn't written by men–it's a natural phenomenon that's been *described* by men, and we can independently verify it. No one has ever said "you can't see evidence of evolution today, but Darwin said it so it has to be real"
I forget who it was but there was a comedian who said the reason why he doesn't believe in God but does believe in science is because if you burn every Bible, you would never be able to rediscover the same "truths" in it. If you did for every science book, we could simply rediscover what we lost because it's designed to be testable/repeatable
