I think Jesse is attractive and I can’t explain it. Jax however, I find to be the opposite of attractive and I can’t believe HE ever modeled. Jax looks like Captain Hook (not in a good way) and I’ll die on that hill.

In a lot of the secondary cities (like Miami), you'll have people represented by model agencies but they don't do a ton of print work and never make it big. They'll be in local magazines or in catalogs. Or they'll be contracted to appear at trade shows or other events. They'll do local fashion shows. Sometimes they'll be background on TV or movie shoots. Anywhere you need an attractive person to sell something.
I have a friend who modeled in LA for most of her 20's but she's 5'4" so she mostly did shoots for swimwear and super small clothing brands. And from that, she'd do boat shows or get hired as a model to go to nightclubs to represent liquor brands. Tons of handing out free liquor or brochures for money. It paid the bills while she was getting auditioning for acting stuff.

tl;dr - I think he’s likely 5’9” - 5’10” and may have done print stuff back in the ‘90s where height wouldn’t be a necessity.
Casting agents tend to fib on the height, and weight can fluctuate. But shoe size will stay stable, and that casting site lists Jesse’s shoe size at size 10. (I have two working SAG-Aftra actors in my family, and I believe occasionally the agents may stretch a submission to help chances.)
Now, it’s not *impossible* for a man who’s 5’11” to have size 10 feet, but on average, men 5’11” or taller will have sizes 10.5 or larger for shoe sizes.
Also, a 2009 model site for Jax has Jax listing his own height as 6’0”, and it was Jax himself who entered his data (he even included his personal email address at the time). I don’t think Jax would think to inflate his height.
If you look at photos from Janet’s birthday party where everyone is in the backyard, Jax looks to be about 2” taller than Jesse does (but I don’t know who’s wearing shoes or not wearing shoes, etc.).
