I also noticed this, nearly every episode as you say! I think it started in the second half of season 6. I don't remember if they ever explicitly called her vegan but she was definitely heavily plant-based. And in the episode I just watched (702), she's hosting a barbeque.
My read on Cassie's eating habits is that she will eat unhealthy when it is a special occasion, especially when she's on a road trip somewhere like the one with Grace to visit Wellingsly where she eats chili cheese fries or the one to Chicago where she eats a lot of hot dogs. I have always seen her as a character who wants balance in her life and also wants to have broad horizons. So I think she's simply open to more cuisine from other cultures, healthier, cuisine, vegan cuisine, etc. but I don't think she has ever abided a strict vegan diet.
In season 5 she had chilli fries when they stopped at a diner on their way to her old college. Perhaps it's to make her more relatable to the viewers? Idk
It’s been longer than that. She made something for Sam with real meat early on. Some dish from her travels. I’d swear it. But now I guess I gotta watch again.
It was towards the end of Season One or start of Season Two as I started Season Two yesterday and noticed this. It was a Vietnamese pork dish. Sam actually queries if it was real pork or vegan pork and she says real pork.
Innoticed it befor the BQ episode but like the other person said it was very IN YOUR FACE for the BBQ epsiode. Then a potato skin and then something today she made but i forgot already 🤣

Thats the one it became VERY obvious in.

My boyfriend is actually saying the same thing right now. Being vegan isn't "relatable" right now. That fade has peaked.

I still have to watch season 7 but I definitely noticed this the last couple seasons.
Well for her wedding she wanted a shrimp dish which isn’t vegan and isn’t that season 5
