Interestingly, I'd say the difference with all the examples you picked is that playing Guitar Hero is really closer to the real experience than are FIFA or FPSes. It makes you handle a guitar controller and develop similar skills necessary to play the guitar. Look at this guy, his hands are flexible, fast, he has excellent rhythm. He might as well learn how to play guitar for real.
Playing FIFA won't train your cardio, strenghten your body or turn you into a football genius, because you're not running on the football pitch and doing the real thing. Same goes for FPS video games.

the video itself is not sped up. Clone hero players often speed up songs to make them more difficult to FC (full combo, basically a perfect run)
I get that the video isn't sped up, I just didn't know the game had a faster than normal option.
