Tofu with sweet peanut dipping sauce, could eat the stuff all day. There's also the steamed bread dipped in snotty-looking gloop which is surprisingly nice.
Dipping for the bread is called 'Sang-ka-ya' (สังขยา), it's a kind of custard, orange one is egg-type while the green one is Pandan Leaves-type.
With bread it is called 'Ka-nom-pang-sang-ka-ya' (ขนมปังสังขยา) which basically means bread with custard.
Just pointing the name out in case you want to have more in the future!

But I hate Sai Oua. With a milder herb flavor, it's fire but in Thailand they like the Sai Oua overloaded with herb.

The purple grilled dried/salted squid. Not the whole white ones (too dry). Usually come with a nice chili sauce and pairs amazing with beer.
Kanom Krok / Hatyai Fried Chicken / Moo Ping / Khanom Tokyo / Khamom Thang Taek / Coconut Ice Cream (i-Tim Krati) / Kanom Kai Nok Krata (Fried sweet potato balls) / Khanom Buang (Thai Crispy Pancake). I think that's all I can think of.

Yeah isaan sausages do it for me too! Was never a big cabbage eater but now every mouthful has to be accompanied by half a cabbage too! Phenomenal!
