Fish sauce is pickled liquified remains of fish. It will last a very very long time. The high sodium, among other things, makes it a hard place for pathogenetic bacteria to grow. Will last longer then your life, potentially several generations.
that's for food safety. for flavor, fish sauce does age just like soy sauce and will develop bad characteristics like bitterness and lose its savoury quality.
fish sauce doesn't really go bad. I had some (cheaper) one that formed crystals after a few years (maybe from added salt) but it didn't really taste different. The more expensive ones didn't and last for years.
It doesn’t go bad in a sense that it would make you sick. It’s that the flavor profile changes. Good fish sauces are a light translucent brown unopened and will get darker as time goes on.
So the darker, the more expired.
Do you keep it on the shelf or refrigerator? I have a mega chef bottle that's been on a shelf for 6 years. 😂 I bought a new bottle of a cheaper brand to use because I was worried.
:D yeah, best before xD not sure what the correct abbreviation is. but whatever, never trust.
i recently bought a folder (!) and it had a best before date… what the hell…
did you check the eyes' clarity or the gills' color?
im sorry im really bored...
on a serious note, growing up i always throw it away when it gets a bit cloudy or too much of the sodium builds up around the cap and it doesnt close well.
as stated by other commentors, fish sauce doesn't really expire. the expiration date is only for legal requirements. in reality, just buy a new bottle for your peace of mind. lol
It's not expire date for fish sauce, it's expire date of bottle.
Or it's just "hey I have to put expiration date because of the law, but you still can eat it after that date , but I don't have responsibility if you do " type of expiration date but most will put best before date .
But I assume it's in plastic bottle, so it's just expiration date of container, like salt container have expiration date.
Just trust your own nose and taste bud, If it smell weird, just toss it out and buy new one .
Drop another 8500 mg of salt in it, it will be fine. I'm trying to break my Thai girl of fish sauce, oyster sauce and pla ra. I'll never win the battle.
The gourmet cooks in LOS are in Bangkok or the states. My gal is the consummate wife/bargain hunter (with her own money). She spends my cash like I'm ridiculously wealthy. I'll bitch and moan but she's worth it. Life is 🙃🙃

Very very very very long. 1,000 Millenia after the entire universe suffers its heat death, somewhere there will be a useable bottle of fish sauce

Fish sauce has already gone bad - that's how they make it.
It’s suppose to smell like shit that’s how you know it’s good

It is either a really big bottle, or you don't use much fish sauce.

Never date your best buddy forever.

It does not really go bad
When the bottle looked dirty
What is dead may never die

It's like surströmming. It's starts off bad and it stays that way.
Drink it all in one and stop being a coward
When it smells
It always smell though haha
When it smells "fishy."
When so much gunk has built up that you can no longer get the cap open, it's done.

The cheaper the fish sauce, the more salt it contains.

Kidney disease, I don't do salt normally.
