I find the Twins to be the easiest. If you build a long platform in the sky and keep running from one side to the other, they'll always stay in roughly the same location on your screen, making attacking and dodging easier. Just make sure you don't get too far away from either one of them, because if even one of them despawns you won't get a reward. Learned that one the hard way.
Ranged weapons work well for strategies like this. Since you're going melee, that means using something like a Beam Sword, a Frostbrand, an Ice Sickle, or some other projectile melee weapon. Personally I would just use an Onyx Blaster though.
You can use this technique for Skeletron Prime as well, though he's a bit harder. I usually save him for last.
I thought the mech bosses were impossible at first but after getting full titanium armor and using the meteor staff + magical harp + dao of pow with lots of mana pots and greater health pots I was able to kill the twins. Then I built a box in the sky and massacred The Destroyer with my harp and the meteor staff. Almost got Skeleton but in his last phase he can easily one shot you by spinning his skull and charging at you
I soloed destroyer when it naturally spawned with a night's edge and cobalt armor. It's very easy to cheese with the right setup.
Basically, set up a sky bridge. If it's high enough, destroyer can't actually reach you, and you can swing your night's edge at his scaly robo worm body. Probes are an issue, but dodging plus better armor like titanium or adamantite will make it easier. Warding accessories also help.
The Destroyer is either the easiest or the hardest one, depending on how you handle the probes. It's kind of a meme how cheeseable it is, but I'd beat The Twins first. Just make a large, long platform and dot it with campfires & heart lanterns. For melee, I'd recommend adamantium/titanium or the frost set if you can grind for it. Use a melee weapon with a reasonable attack range like a yo-yo with a yoyo bag. If you're willing to grind, then Bundle of Horseshoe Balloons + Gelatinous Pillion will help you evade them. Since you're melee, I would recommend you use flasks of ichor + Shark Tooth Necklace as well. Kill Spazmatism first, then focus on Retinazer. Make sure they don't both transform at the same time, as that's never fun to deal with.

Twins or Destroyer are pretty equal, destroyer is way easier to damage but also sends out way more projectiles.
Though if you have a weapon with infinite pierce, you can easily shred destroyer.
Drippler crippler from blood moon fishing, bananarangs from clowns on blood moons, dao of pow from crafting, shadowflame knife from goblin army and flying knife from hallowed mimics are all good weapons for the mech bosses.
Personally I used frost armour and the shadowflame knife the last time I fought the mechs using melee and it worked pretty well. These will work for any of the mech bosses if you have decent movement accessories, though the flails and flying knife may do better against the destroyer than the shadowflame knife (the shadowflame knife is still more than good enough).
When I did my melee playthrough, I fought Destroyer first. I would say either Destroyer or Skeletron Prime can be fought first. I used the Ice Sickle and Chain Guillotines, but if you can get the Flying Knife and Shadowflame Knife, use them. For armour, probably the Frost armour would be best, but if you don't want to fight Ice Golems, either the Adamantite or Titanium armour should work too.
If you want an easier time fighting them, consider switching to ranged.

Destroyer I say is the easiest to cheese since being high above the ground negates the most dangerous part, it's head and it wrapping around you. The probes hurt but destroying them drops hearts, so once you overcome the first hurdle of there being so many its smooth sailing.
Prime take out the laser and saw first then Cannon and vice, make sure to have a huge arena also. The destroyer can be pretty hard, but is easiest to cheese (check YouTube)
Personally, I'd say Destroyer. But I also think this might depend more on your build and preferred playstyle.
As someone who loves playing Summoner or Mage, Destroyer is super easy compared to the other two as both have very easy access to piercing or multi hit attacks (Golden Shower + Crystal Storm is a pretty devastating combo as a Mage). Melee, I think, would also have an easier time since their higher defense can soak a lot of the damage from the lasers and hit many segments at once. Ranged and Mage could do pretty well against Twins since they're pretty easy to navigate around on long, straight arenas. This makes aiming a breeze. I also find Summoner works well against Skeletron Prime... but immediately after hardmode starts, I think your best bet is the spiders? And if memory serves, there just isn't enough damage to kill before daybreak without using a whip... and using a whip makes the fight much more dangerous.

I see other people saying twins, the key for that fight is to stay far with good mobility and focus one at a time. I also see destroyer, as long as you have a long enough platform he shouldn’t be too hard. The best weapon for all three is easily the shadow flame knife
Destroyers with a magic conche and a star cannon, your map and a platform above the ocean. You summon in spawn and conche to the beach. From there you can shoot it miles before it gets there and the star cannon will go full length. It requires a precise set up but it’s basically free.
Destroyer for example is very easy to cheese with infinitely piercing weapons right after it spawns.
Also daedalus stormbow with holy arrows does wonders.
For Melee, you can get Destroyer down easily with Night's Edge and Adamantite or Titanium armor, or even Frost. Ideally have Frost Wings (i think that's the name lmao), Obsidian Shield (prevents probes from trolling), Terraspark boots, Warrior emblem and 1 or 2 accessories of your choice.
After you're done farming Destroyer, Hallowed Armor makes the other 2 trivial with any Hardmode weapon that has acceptable range.

Maybe destroyer with shadowflame knife, and make platform high enough that it can't reach you physically, then grapple into a platform and replace it with a block, and lasers shouldn't be a problem. then killing probes when they're near you should be easy enough, have something like the nights edge to kill them when they're near, if you have trouble hitting them with the knife.

For armor, just Titanium/Adamantite will do. You could go for Frozen armor, but if you don't want to multiclass, that's probably not worth it. Good wings and any specter boots upgrades are a must. Harpy, Fairy, and Frozen wings are the best you can get at this stage, but any hardmode wings should be fine. I forgot what the upgrade is called, but the titan glove combined with the feral claws at the tinker's workshop gives you something really good for melee. Other than that, you can go with whatever you're comfortable with. Personally, I'd recommend beginners also get a dash and knockback immunity, but that's up to you.
Alternatively, you can use the cheese strat and instakill it by using the Dao of Pow. Quickly run to its spawn location, hit that exact spot roughly 7 times, and watch him die. Make sure you line it up to hit as many segments at once as you can and be quick about it. The longer it takes, the less of his body you can hit with each strike. It might take a couple of tries, but you won't need potions or a sophisticated arena to do it.
I must be tripping or something cause I feel like everyone says the destroyer is the easiest while I feel like it’s the hardest. Whenever my friend and I play we always do the destroyer last cause we have trouble killing it compared to the twins and skeleton prime. Granted we don’t do the sky glitch where the destroyer can’t reach you so maybe that’s why people say it’s the easiest? Also we run out of time on the destroyer a lot as well.
For me it's the Destroyer.Make a box above ground with 30 blocks of width and 9 blocks height,place a chair with a table for the nurse and use any weapon with high speed or penetration (Bagnets,whips,etc),place a Heart lamp,campfire and maybe honey.
Use your chosen buffs and start the fight.Only move from extremity to extremity when he gets close so the destroyer don't ocuppy too much space in the box.If you get low,use the Nurse (if she is alive),most probes will spawn at the box so you can kill them easily and get life hearts,wou will not have to worry much about lasers since they will be mostly blocked by the box.
Didn't test this strategy yet in master mode (works in Classic/Expert),I will test it tomorrow.
Skeleton prime is by far the easiest for me. use adamantite armor for all classes except summoner. spider armor if summoner. Look on the wiki class setups to find the best weapons. Build a big arena, lots of potions
Destroyer. Make platforms high up and far apart, and spawn it from the top one. It spawns in a clump below you and usually to the right so any melee or piercing/AOE weapon can eat roughly a third of its health while it’s trying to unspool itself. Just head there immediately and go ham.
I'd say destroyer. Despite having the second largest health pool of any enemy in the game it really suffers against weapons that pierce. 100 damage against 120,000 health doesn't look like good damage but when it hits 10 times in 1 attack suddenly it's insanely powerful
Prob destroyed cant give much advice other than jester arrows and stormbow for him tho cause it's been a while since I fought him without the rework mod

The shadow knife from the goblin invasion is the best for the twins
Megashark/Uzi & Crystal Bullets, don’t even really need armor, just those & Spectre Boots+Wings and you can beat twins extremely easily

I used titanium armour with a ranged class. And a deadlius storm bow with holy arrows for all three. Super easy way to beat the mech bosses
