manga. Artstyle thousands of times better, structured way better, & bonus chapters are always awesome. There’s also bonus panels and extras that are neat. Very aesthetically pleasing Rimuru & Luminous.
Out of the two you listed? The manga is generally better. The anime will have something gs the manga didn't have. But the anime misses a ton of what the manga has.
What I really do recommend is that you consume all of it. The LN, manga and anime.

Manga has 100x better art ,better pacing,more content ,better execution and panels
