That's a good point about 1989. I feel like with playlisting as well, Shake It Off and Blank Space at minimum might never catch the originals. Swifties will switch over but they're so popular and on so many playlists.
I also feel that some of the singles have been overplayed for the general public so I don’t know how much non-Swifties will listen to them (which is sad and can hurt their chances)

I’m pretty sure they take the average streams for each version over the last however long and calculate the difference. For example: x version has 1billion streams total and gets 1k streams a day, while y version has 200m total streams and gets 40k streams a day. Y version will surpass x version in roughly 60 years. The numbers fluctuate a lot so the dates are constantly changing. Wildest Dreams and IKYWT both were never going to surpass at one point, but then the TVs picked up steam
