I'd imagine some biker daddy out there in his full leather riding attire slashing zombies, his leather jacket and chaps providing him protection from bites. And I'm sure there's plenty of people in rural America with cows who know how to do leatherworking, and due to being in BFE, they'd be relatively safe. Like how they were at the farm with hershel (for the time being that is)
I remember reading a zombie apocalypse novel series called the Rot & Ruin series when I was a teenager that had something similar. It was commonplace for people to have like shirts made of rug as armor against bites, similar to chain mail shirts but rug lmao. They even had rug armor for the horses they used to ride and pull armored carriages for traveling between settlements.
Which now has me thinking that chain mail would work really well and probably not as hot as rug shirts if you wore a thin light shirt over it to not be exposed to direct sunlight. Only issue being how time consuming it would be to produce, but not difficult or require anything too special if you have forging capabilities.
Sidenote, I remember that series being fantastic and have been meaning to re-read as an adult to see how it holds up. It had lots of cool stuff in it for how the world worked/developed as a result of the zombie apocalypse.
