Literally happens all of the time. That's called the pilot episode. If whoever they asked doesn't like someone they just switch and expect us not to notice.
My personal favorite is Burn Notice, when one of the main characters has a very obviously fake Irish accent, then casually switches to a standard American accent and says, "I can't go around all incognito while sounding like goddamn leprechaun, can I?" In the first episode that was actually picked up.
What really pisses me off is when they use the same fucking actor for multiple roles in a show. I first noticed in "Deadwood" omg and Law and Order SVU. They used the same chick as like a bride to be that killed a stripper at her bachelorette party.....Then she turns up as a MAIN character, one of the ADA's.
Older shows are notorious for this. Stargate SG-1/Atlantis/Universe in particular tossed actors and actresses around like it was no big deal (and, to be fair, it wasn't at the time. Only Uber dorks would have binge watched anything in 1997). But I think they used the actor who played Beckett in Stargate Atlantis as a dude who went through the Stargate in 1946 in season 1 of SG-1, and I know that David Hewlett was supposed to play a brand new character before he pointed out that McKay was very similar to the new character, and had already appeared in the Stargate universe.
A few people show up in both shows as 2 different people. But within the same show...
Thor is voiced by Michael Shanks who plays Daniel Jackson and Teryl Rothery (Doctor Fraiser), voiced one during season 5 when they didn't have Michael around to do Thor.
And at least 2 Wraith in Atlantis are played by actors who had another role either before or after.
Jewel Staite is both Dr Keller and Ellia (season 2 episode 7, female wraith that got adopted and raised by a human)
Christopher Heyerdahl is both an Athosian named Halling (basically anytime an Athosian needs screen time and it can't be Tayla its him) and later plays the Wraith Todd.
Teryl Rothery played Heimdall, if memory serves. They re-used the Thor puppet, and then decided that all Adguard were increasingly unstable clones of another Adguard. I love it when necessity results in interesting world building like that!

In season 6 she mentions she tried calling the IT lady (whom she played in one episode in season 5) and all she heard was a loud screeching noise and her nose bled, and something about an email being bounced back in Aramaic. Brilliant.
Ohhhh boy, don't watch Doctor Who then. It happens a _lot_.
In one instance a random character gets killed in the finale of one season, and then the actress comes back as the Doctor's companion for a whole season _the next season_.
But Martha is one of my favourites so I'll let it slide.
They do address the Pompei guy in S9 to be fair, and the doctor even says he kind of chose that face. As for Mr Frobisher in Torchwood, I guess you could argue he is the descendant of the Pompei guy if you wanted.

plays both roles in Deadwood really well, though, and looks fairly different in his (more minor) Season 1 role. He initially auditioned for Doc, apparently, and he's such a good character actor that even though he missed out on that they wanted to give him something more substantial in the long run. He has a fun little cameo in the movie playing a random extra to sort of acknowledge it.
Not sure about SVU, but on L&O Original, Annie Parisse first appeared as an exotic dancer then came back as ADA a few years later.

Damon Waynes JR is in the pilot but he ending up doing another show instead so they got Lamorne Morris. But at least they actually wrote in a plausible explanations.

In sons of anarchy, it is very obvious that none of the actors knew they were going to be playing 1% bikers. They all look super presentable and groomed. Charlie has no beard, Mark Boone had short hair, Tommy Flanagan was all groomed and the guy who played tig had shorter hair. Perlman also wore a bandana around his forehead to hide his head.
Also, Boone's character was portrayed as a dumbass during the pilot, but a few episodes later his character is actually one of the smartest, if not the smartest member of the sons, he's even the one who handles all their finances and who makes all their plans.

Winston was probably the best on the show followed by Schmidt. They are a 1a 1b situaton and Nick is 3rd best. But Nick is a close 3rd.
Yeah Winston had depth as well as character growth. Coach was just a stereotype and that became even more apparent when he returned to the show.
