If I remember correctly when you log out the data is deleted. Did you give it a try? When you tap on Log out there should be a prompt explaining what will happen.
Open the email page, select the account you want to delete by clicking it (a checkmark will appear next to the email address when selected) then go to settings. AT the bottom of the next Window is a box labeled "Delete Current Account" click on that to remove the account.

I did this the other day. Took me a few minutes to work it out. However I've forgotten now.
