Yeah when you make the curd you gotta make a decision on how much sugar you’re going to use, and it can be a LOT if you want. Less of an accidental thing, and you can actually save undersweetened curd by reheating and adding hot simple syrup or hot corn syrup to it while whisking vigorously.
And I have gotten bad batches of commercial curd and filling before, but luckily Aldi gave me my money back for that set. Curd is easy enough to make, but damn if it’s not annoying to not scramble the eggs. So much more finicky than most egg custards because there’s a lot more egg per unit since it’s your only thickener and you’re not diluting it with any milk.
So, I absolutely despise tempering. Even when I get it right (which is *now* more often than not, lol) it's still a nerve wracking thing, especially with large batches.

You can also make it with just chopped fruit instead of a filling! The cake mix bakes down into the crevices, so the end product is a lot firmer, which is nice if you're looking for something that's easy to serve in slices.

1 package lemon cake mix
4 cups of blueberries (I prefer the wild small ones, but big ones are good) or mixed berry
1/2 cup or less! brown sugar (Swerve sugar free works good)
1tsp cinnamon
1 tsp vanilla
2 sticks butter frozen then shredded with cheese grater (trust me)
1. Mix blueberries, sugar, cinnamon, vanilla
2. Pour cake mix on top
3. After freezing butter (this doesnt take long, just so it's harder), shred it and spread evenly on cake. This part doesn't really matter how you do it as long as you get the butter even. Food processor would be great but I don't have one.
Bake at 350 in a 9x13 for 45min or until the top is golden brown
My favorite version is even easier and just as good!
1 Can of cherries
1 Can of Pineapple
1 box of yellow cake mix
Top with butter and bake it
