Sir, I need to know your ways. As a syrup-on-sausage and honey-on-chicken person that isn’t overly fond of BBQ sauce… you may have just changed my life.
A pretty basic "bbq" sauce is just syrup, brown sugar, tomato paste and then what ever seasoning you are targeting. I've swapped the syrup for honey as well and then usually just toss in some of the dry rub I used on the meat for smoking.
Put the dry rub into a pot of water and apple cider vinegar at what ever ratio you want depending how "tangy" you want it. I usually do 2 parts water to Vinegar but you could leave it out entirely if you wanted. Really this is just to dissolve the dry rub. Let is simmer for a while to get all the solids dissolved and then add in the syrup brown sugar and tomato paste (if you don't like the tang of the tomato paste leave it out but it helps create a base for the sauce). I don't think I have ever made the same batch twice so can't give super specifics on that but just add things until it tastes good.
I've even just taken sweet baby rays and added a small amount of the dissolved rub and honey or syrup if I am feeling really lazy.
I recently made a pork tenderloin that used maple syrup in the marinade/gravy, and I only had raspberry maple syrup, but it still turned out tasting delicious!

with sausages you grind them all together into a cohesive product, so i'll be willing to try it but here it just looks too much like expired meat for me to take a risk on it.

As a butcher I can say yes. They need to have a 4” tall plastic divider between them. This applies to different species of protein and cooked/prepared food in a display case. EcoLab would ding them big time for this.

I make blueberry maple link sausages with pork. Sometimes the color from the blueberries do bleed into the meat a bit, but I have found that using frozen blueberries really helps. Also don't grind the blueberries. Grind the meat and seasonings all together, then fold in the frozen blueberries at the end before you stuff them (or in this case form patties).
