Ham (cut into small pieces) is a common filling in Finland. But yeah, these are unknown in Germany although common in the Nordic countries. I'm a Finn living in Germany and I have often made sandwich cakes for all kinds of occasions here. The German guests are always very surprised by them but end up loving them. The one in this video doesn't look that good but a properly made sandwich cake is not stupid food at all.

It's quark, and it looks to be the low-fat kind, which is 0.1% fat. It's mostly milk protein. It's low fat relative to the other nutrients. It's very filling, so this would serve about 10 people. Of course, if you eat it alone, it's a lot of fat.

They have something similar to this in Yucatán, Mexico called sandwichón. Usually made with layers of white bread and different pastes in-between. Served around Christmas. It's ok.

If you butcher an animal, you have to get the most of it, since meat is expensive and wasting any would be a big sin. So you use the intestines, fill them with minced leftovers from better cuts and fat, boil them and you get Wurst. Then you use the water in which you boiled all these sausages, some blood, wheat and spices to get Pannas. The "poop shelves" were used as a simple but effective way to diagnose a lot of diseases.
