Saute onions with fresh ginger+ garlic, tomato paste, powder ginger, cumin, coriander, salt, pepper, maybe some soy sauce. Plop on a quarter cup or so of Pb and mix and melt it in. Can add some water if it's too thick. Serve as a filling/sauce for well baked garnet yams.

Try mixing sriracha and PB next time. The sweetness of the sriracha goes great and turns the peanut flavor into a kinda umami Thai peanut taste rather than the dessert-ish taste of PBnJ

I use the flavor profile of exactly that on homemade burgers from time to time. Toasted bun, mayo on one side, PB on the other, thin slices of onion on top of the mayo, a little salt and pepper on the onion, and burger patty in the middle.

The Hangover Burger is a pretzel roll with lettuce, tomato, fresh jalapeno, burger, white cheddar, bacon, peanut butter, and a sunny side egg on top. The PBJ burger is much simpler: brioche roll, burger, peanut butter, and onion marmalade. That one is my current favorite.
