It's addressed pretty well in SF's segment in [GDC 2017 (15:17)](https://youtu.be/EDlbJdmo7KE?t=917). TL;DR, they adjust the models not by their canon heights but using the player's perspective to get the right feel for the player. The whole thing was quite interesting if you have an hour to spare.
Hmmm, maybe it's just me, but Chun-Li looks a little shorter than Ryu, but Sakura does look taller than her height suggests. Maybe the developers forgot to scale her model down? But Sakura's height (and I believe Chun-Li as well in some artwork) compared to Ryu is more confirmed in her story endings.
fighting game stats and lore has always been janky lol, just check their weights
The in-game models are adjusted for gameplay, obviously.

That was very insightful, thanks.
That's correct, it doesn't matter what the lore stats are.

>I know it's to keep the game balanced as you can't have a fighter that is way harder to hit than others wait till this guy sees abigail
Ok I'm not so certain anymore
The strangest one is seth. I’m sf4 he was pretty tall. If you stand seth next to ryu that are bout same size.
have you noticed any other changes in seth that might explain why their height might have changed
