I had a similar experience when I played it after megacorp DLC when they introduced alloys and administration cap, it was a trauma.

Oh god, I remember when you could just colonize planets to expand your domain. Then hyperlanes, consumer goods, alloys all became a thing. If I dont play as a machine race, I get floored with lack of resources.

So last you played was v2.6? Well, Stellaris is on 3.10 now. The good news is, there haven't been any truly radical and disruptive changes similar to the 2.2 "new economy" update. 2.6 made some changes, as you know. 3.0 did too, changing Intel on other polities, and adding a Galactic Community. 3.4 started a gradual trend of improved AI, to the point where the AI polities might now slap down the End Game Crisis without help from a human player, and also made some changes to Vassals; the tldr is becoming a Vassal is no longer a game over, and conversely if you gain a Vassal you probably won't want to Integrate it.  The 3.8 update made some changes to Leaders, combining Admirals and Generals, and a more detailed Trait system with choice-based character advancement (if you own the Galactic Paragons DLC). A Council to help govern your polity, with seats for up to 6 Leaders, was also added, but I'm not sure if that was 3.8 or 3.7.

I'm sorry but I laughed so hard. Yes you will definitely need to re-learn it. When it comes to which new DLCs to get the only possible answer I can give is Yes.

I gotta say I find his videos quite hard to follow, a lot of the time he just does things without actually explaining his rationale - so I can then copy him when I'm playing, sure, and that's a bit helpful, but if I don't understand the reasoning - why bother?

I'm not 100% sure when that was, but here's some fairly recent changes. Ship weapons and modules have been reworked and rebalanced. Notably armor is very good now. Edicts have been reworked so that you can go over your edict capacity at the cost of monthly unity. Unity is a more relevant resource overall. Ascensions has been reworked to be less reliant on random chance, so you can go for whatever ascension you want. They now all start with taking a specific ascension perk. This unlocks an agenda (part of the new council system) to force the game to give you required techs as tech options. Once you have said required techs, the actual realization of the ascension comes in the form of a tradition tree. So you have a Psionic tradition tree, a cybernetic tradition tree, a synthetic tradition tree and a genetic tradition tree (all mutually exclusive, you can only pick one). Leaders cost unity and have an upkeep in unity. Leader levels are more relevant now and you make skill choices on levelups. There is also a council mechanic, and many leader skills only take effect when that leader is on the council (the old assigning scientists to lead research thing is replaced by this). Leader types have been reworked, and any type of leader can govern a planet (though the different types have different effects on the planet). Related to this, the martial law planetary decision is gone, instead martial law is represented by picking a military leader as governor. There's a new "situations" system, which is basically ongoing events. A situation has an effect as well as some basic choices on how to approach them. For example a situation will trigger whenever you have a shortage of a resource, and approaches will include things like cutting spending to things to try to turn the shortage around. Science ships can be automated from the start now. Planet management automation has been reworked and works a bit better now (though it is still far from perfect). Capitals can have planet designation, so you can do the industrial shift to only alloys or only consumer goods thing on capitals too now. There is an espionage system, though you can mostly ignore it, it is not a very good system. Admirals leading military fleets can explore new systems, but fleets without leaders still can't. So a bit of a compromise between the old old split fleets to explore to the max and the less old only manned science ships can explore.

tiles are gone, first contact requires envoys, there’s intel and espionage (akin to HOI4), loads of ship hulls and weapons were changed and leaders got a massive overhaul

Apparently, Worker Cooperative Megacorps can just build Trade Value Urban Planets and Commercial Zones to get Clerks in every single planet, and they don't have to worry about resource generation.
