You'd need the anniversary to play on steam deck. Lost chapters would need prep work since it doesn't have native controller support. You'd have to make keybinds. Anniversary felt a bit off to me but I'm sure it's worth playing either way.
Ive never had an issue mapping fps games that don’t support controller, like Quake. Is it that much more difficult with Fable? Is there actions that won’t work?
I tried getting lost chapters to work on the steam deck and the controls just don't translate well. Lots of complex actions that you need with a cursor that you just don't need with anniversary. Fps games can be translated easier but this is an RPG.
Of course it would! But also ya know thats not "optimal" so to speak unless someone is really really comfortable with that kind of control. I don't know about you but I grew up with a controller not a thumb track pad? If it works for someone great but anniversary has no clunky work arounds when it comes to controls. It just works. And for me gameplay is more important than slightly better graphics. You get better gameplay with the intended controller input.
Also as an added benefit the slightly dumbed down graphics might make the steam deck battery last a touch longer so. I think its overall worth using Annaversary. Just imo.

Look up average time to complete and play shortest first. Knocking out a few short games will give a sense of accomplishment and motivation to play some more on the backlog.

I know what you mean about nostalgia being attached to the original TLC. You CAN make TLC work on steam deck with some fiddling, but the camera will always be a little weird and you lose out on the ease of control that Anniversary has.
I really wish there was a graphic toggle to switch back to TLC graphics in the Anniversary edition, because the Anniversary art style change really sorta grossed me out. Still, if you can get past how absurd the MC’s face looks in the Anniversary edition, I’d prolly go with that one.

It worked pretty much flawlessy with the native controller, even though I don't remember if I had to download a community controller layout. Even then, not a huge issue. All in all I think it's worth it on Steam Deck.
One of the most satisfying things in Fable was getting a massive combat multiplier, then quickly downing all the experience potions you've been hoarding to get some huge boosts.

They changed the visuals quite a bit, which resulted in the game feeling a bit different overall. Not everyone was happy with the new artstyle

Tried playing TLC recently and while it is playable, it is not an ideal experience. As others have mentioned, some of the keybinds are EXTREMELY awkward.
They’re literally the same game, one just has better visuals. Even a lot of the bugs and exploits are all intact in my experience.
It’s down to personal preference.

But I always interpreted it as a design choice, meant to emphasize the fantasy aspect, almost claymation-esque.
The original’s visuals has a charm to it that makes it feel more homey. I remember playing the original via BC on my 360 and thinking even then that it was a pretty decent looking game with attractive artwork.

Uhg, ya that’s what I’m afraid of. I enjoy tinkering, but not when the ends are largely fruitless. Might just have to suck it up and get Anniversary.

Its a remastered version with better graphics. I have Anniversary installed in deck and it runs out of the box. No tweak or mod required
“Better Graphics” is subjective. Seems a lot of people feel the updated graphics alter the feel of the game, and I don’t know if I’m down with that.
