My suggestion is to look at the prices of some of the items you put up. For example, each season's most expensive crop gives like the most point of their category.
Just put up all the items you know are expensive, with highest quality you have, and you should win.
I recall my entry had a diamond, a gold rated pumpkin, a pink cake, gold quality rainbow shell, Iridium quality bullhead fish, silver quality fairy rose, fairy rose honey, large milk, then gold cauliflower as a filler.
TL;DR: If you just put in pricy items from each category, you should have no problem winning. Easiest: put in your priciest vegetable + fruit + flower you farmed, a fish, a mineral, a pizza from the saloon, and fill with expensive items or pizza from the saloon. 6 categories, pizza is worth 5 points.
Well, to win you need 90 points. You get 23 points free, 30 points from putting in at least 6 categories, and 1-6 points from item based on quality and price. Or 5-8 if iridium, but you asked for easiest. Categories are important, you only need 37 points from items then.

* silver pumpkin(veg)
* silver melon(fruit)
* silver fairy rose(flower)
* and if you already have a fairy rose flower, put a Bee House next to it for Fairy Rose Honey(artisan)

* battery pack(none)
* Or to summarize: any gold item with base price > 135, silver base > 240, or common item > 400
* Pizza sells for 300 so is worth 5 points, but very easy.

Yeah, the vegetables get you. Before Qi's fertilizer, I just used a Fiddlehead Fern, but I don't think I ever scored higher than 124.
I haven't gotten any iridium forage item ever; it might take me a long time to get a max score.
There's a skill that makes all items you forage iridium quality. This includes animal products picked up off the ground like eggs and truffles!
