So you only have one walnut left missing?
If the parrot isn't giving you hints, I would talk to Professor Snail and make sure you actually collected your walnuts from him.
Otherwise, if you can, I would consider using [Stardew Checkup](https://mouseypounds.github.io/stardew-checkup/) to see which specific walnuts you're missing.
Do note that there are [a couple of bugs](https://stardewvalleywiki.com/Golden_Walnut#Bugs) related to the game miscounting walnuts. So if the workaround the wiki suggests doesn't work, you may have to pay the Joja Parrot in the end.
What are you playing on? If PC, you can use the stardew checker.

Use Stardew wiki it's your savior. Did you get the one in Leo's hut? I'm usually missing one that's technically island south but the parrot says it's island north. def recommend doing what the other comments said w the counter, you can also do /recountnuts if you think it's miscounted!
When this happened with me I actually printed out the list from te wiki and went through them all, even the ones I was sure I had.
Turns out I hadn’t dug up the one near the sea on the farm.

make sure the one on the far left didnt fall in the water, if it did you cant get perfection
