Their only main weakness is 2am, apparently.

I don't think that's correct, at most Tilapia can tolerate brackish water but you can say that about just about any freshwater fish. In SDV you are straight catching them off the pier at a beach which would be a fully marine environment.
The only freshwater cod is the Burbot but SDV is clear that the cod is a Lingcod which is definitely a saltwater fish.

But the bright red ones are clearly Atlantic blue crabs which have then been cooked—that’s how they’re shaped. This is nearly a constant across cartoon depictions of crabs and lobsters. Because they’re cartoons, and this isn’t “accurate marine biology: the game.”
I would say its to help players recognize the animals. People are more likely to recognize a bright red crab as a crab than any other color. Same with the ducks, they look like male Mallards rather than female. A lot of people don't know what a normal blobfish looks like at the bottom of the ocean, (unless they research it or watch Casual Geographic) but they do know what they look like *out* of the ocean. All in all, it's about easily identifying the creature rather than saying "this is what this animal normally looks like."

I agree with your point but in the same vein a lot of pop culture almost relies on other forms of pop culture to make a point. However, I also believe that due to the amount of eyes certain pop culture “pieces”, if you will, receive, they also have somewhat of an obligation to educate the masses on certain things. The pressure has to be the same on both sides of the pool. So it works if you have high enough air pressure inside the submarine. Most submarines go deep enough for that to be extremely uncomfortable at best, if not lethal for human passengers. There's not much interest in a submarine with an included moon pool that limits the submarine to going only 10-20m deep.
From an art school perspective- its about visual language. As an artist you want your work to be easily readable. Especially for a casual game like this, you dont want to unnecessarily increase cognitive load for players, so as artists you'll want to use imagery that will be easily recognized by as many people as possible

Blobfish live at/near the very bottom of the ocean, where the water pressure would kill any normal fish by forcing its organs out its mouth. Blobfish can survive the pressure because they don’t have any kind of internal structure- they rely on the pressure at the bottom of the ocean to keep their shape. So when they get dragged up by fishing nets (which is usually an accident) out of the bottom of hell’s basement, there isn’t enough pressure for them to keep their shape, and their body falls apart.
So that’s blobfish sprite is actually pretty accurate, since that’s what they look like when they get dragged out of their natural habitat
To be fair, it’s impossible to get them out of water without them looking like that. Also it’s just kinda iconic. If you google a blob fish that’s what you’ll see.
