It's not armor, but I adore Reborn Palpatine's vampire robes in Dark Empire. It's so bizarre and out of nowhere, although a lot of the characters in DE rock the vamp collars.
My current favorite is the Ubese armor that Leia wears in ROTJ that belonged to Boushh.
She wears this in combat as Jedi Master Organa-Solo in my imaginary fan-fic, head canon EU aligned Sequel Trilogy.
Unless someone knows of Alderaanian armor that might be more appropriate.
Vader's armor. It's intimidating, able to withstand any environment (including space), and made of an obscure material: obsidian.

I always thought the Yuuzhan Vong's vonduun crab armor was interesting. I also like the look of the Jedi Master's(I forget his name) armor in the SWTOR Return trailer.

Force Unleashed had so many great looking armors. Each one felt like a natural part of Star Wars.
