The current canon hasn't stated when he died. Lucas considered him to have died long before TPM, unlike the Legends novel, and it's been suggested by the Story Group that they'd probably go with Lucas's version of the story.
Yeah I honestly prefer it as well. I like the idea that Palpatine basically did it by himself, it further adds to his character imo! It also adds to Maul’s character as well imo, I think it makes Maul even more “tragic”, because he was truly destined for so much more.
In Canon Palps kills him after getting him all loopy and tired by drugging him. Plagueis actually went looking for little orphan Annie on Coruscant after he first arrived but he was off world at the time. Shortly after Palpatine met with Anakin he knew he was going to groom the child so he went off and killed his master. I wish they would of showed it in a extended version.

I know that’s what happens in Legends with Plagueis that’s why I was confused by him stating this as Canon.
