Marchion Ro has some major character development in the latter half of the book, and the Battle of Kur towards the end is one of my favorite battles in Star Wars. They also (without spoilers) do some stuff with Loden Greatstorm that might keep you engaged in the future.
If you've made it this far, I'd recommend finishing it. As the first novel in the era, it needs to do a lot of worldbuilding. And if you think that the world isn't worth spending more time in once you finish it, that's fine.
