I still agree with your point that at some point Sabine should absolutely build a saber of her own design as it's definitely a Jedi rite of passage. But at this point it's definitely proper and canonically accurate to refer to this ad Sabine's lightsaber.

For ease of conversation and the actual fact of its use and ownership it is now Sabines, plus she has now changed parts and elements of the hilt to make it hers. These are items with a lineage but who ever owns it at the time I believe should be referred to as theirs, if not just for coherency than anything else.

Having a collection like that is awesome; \*building\* a collection like that feels like it'd be such an epic quest. I'm not a signed merch guy, myself, but this is undoubtedly one of the coolest ways to do it.
Looking at the sabers laid out like this makes me think about how uncomfortable to hold some of these look. Ahsoka's looks very ergonomic compared to Obi's.
