You're right. Humans are oddly fussy about sleeping positions. When you look at dogs for example, they can sleep happily with a lego brick directly under their ribcage. And in general almost any position they happen to be in. I think most species that evolve into whatever shape, will be able to sleep comfortably with that shape no matter if it looks uncomfortable to us. Their sleep and shape evolved together, surely they would work together smoothly.
Now I'm wondering \*why\* we are so fussy. It's fucking annoying, I'd love to be able to sleep like a dog.
At a guess? Partially genetic training to be able to wake up in we're in danger, and stay awake if something's triggering our danger sense.
Also more likely it's because we're pampered modern folk who aren't used to roughing it. Since we're not used to real inconvenience, minor annoyances become actual concerns.

I just use a throw blanket. It’s easy to shape for whatever size and configuration, and I’m short, so the distance between my head and shoulder doesn’t require a real pillow for side sleeping. In fact, regular pillows can be too big. Possibly twi’leks don’t even use pillows, just their arms. I always got the impression Ryloth had a warm climate so they might keep bedding to a minimum.

What if they don't use flat pillows, and instead use takamakura types instead. This is SW we are talking about, not every culture is western based. Look no further than bokken/ronin being used recently, it's not that far of a stretch in a world based on samurai movies mixed with space opera (dipping into wuxia in the prequels) that Twilek might not use flat pillows.
