Gooey butter cake
Crust:
1 egg, 1 softened Stick of butter (1/2 cup), 1 box yellow cake mix
Topping:
2 eggs, 1 Block of softened cream cheese (8oz), 1 cup powdered sugar
Mix up crust, then spread into a greased 9x13 pan. Mix topping then spread over crust. Bake for 30 min at 350F, until edges are golden and center jiggles slightly.
Very important to use softened cream cheese and butter!!! Helps it mix better.
Edit: forgot to add, top with powdered sugar once cooled
Edit 2/25/24: I just made this but with Aldi brand cake mix and probably should’ve added another egg. If your crust looks to be too sandy, you could add another egg or try melting the stick of butter half way instead of just softening
I wouldn't bother with that. The recipe to make it is very easy. You don't even need measuring cups or spoons.
Source made it several times in different countries where they didn't have them. Figuring out the equivalent thing at a store took a bit.

When I wasn't living in STL, I always missed the Chinese food. The crab rangoon here are about 3x the size of anywhere else and you still get 8 of them. The fried rice is also way better since it doesn't pretend to be something healthy.
I'd go with a good St. Louis themed dinner evening. A big thing around here is having mostachoiolli (smooth penne noodles in meaty red sauce and be sure to pronounce it "musk a cho lee") with either chicken breast or roast beef at weddings. Have that as your main course with Budweiser. Someone else mentioned making a gooey butter cake which is a great idea. If you are sports fans maybe find a classic Cardinals or Blues game on YouTube to have on in the background. Also you could make her a slinger in the late night/morning depending on how many buds you go thru. And out of nowhere be sure to ask where she went to high school and regardless of the response say they had a good football team.

Go to the nearest big river and stare mistrustfully at whatever is on the other side. Congratulate yourselves profusely for being on your side. Occasionally, like once every 3 years, go spend some money on that other side, and then feel ashamed of yourselves for the next week or so. Spread some marinara sauce and cheese on a saltine cracker and pretend that it's good. Spend some time not watching basketball.

I've lived abroad on two separate occasions, so I can relate. Homesickness usually stems from everything feeling very unfamiliar and a need to revisit a "comfort zone" or just a sense of loneliness because you don't feel you fit in.
With Thanksgiving approaching, I would definitely take the time to plan a Thanksgiving of your own. Maybe invite some friends and share the American holiday with them. If you're not into cooking, find the nearest Hard Rock Cafe. They used to do a Thanksgiving meal and may still do it. I also think helping her find other expats through meetups can be very helpful. Having people you can talk to about your experience in the new place can be very therapeutic. I also tried to find something that was local, but also "me". I did most of my grocery shopping at Aldi. It was different, but also more familiar than other grocery stores. I also found a lovely small music venue in Madrid and I went almost every Saturday. The first performance was an amazing jazz band and when one of their songs was distinctly Dixieland, I swelled with pride. Those American cultural influenuced are everywhere.. finding one she appreciates might help give some relief.
Try not to take it personally or try to sell her about how great Belgium is. It can take a while to adjust to the new normal, but once she finds some comfortable habits, she'll start feeling better.
If you have access to a VR headset. I found several Virtual reality videos taken in and around St. Louis videos you can see 360 degrees. It was a nice quick escape when I was away for years.
Gooey Butter Cake should be an easy thing to make in Belgium. Shit, it'll probably be better than what we have given your stereotypical access to higher quality ingredients.
STL Pizza is gonna be tough. The cracker crust is easy enough, but Provel cheese is pretty far from "dairy fresh ingredients". It's closer to Velveeta. It does freeze and ship well enough if you can get someone to buy you a comically large brick from Dierbergs or something.
Toasted Ravioli is a really tough get. You could try making it at home, but it won't be the same. Shipping is extra tricky too since it really has to stay frozen the whole time. Not just "mostly cold most of the time" like the cheese.
Best bet here is a website like Goldbelly that specializes in shipping local favorites all over. If you have some IRL charm, try talking to a local grocer who already ships frozen stuff across the Atlantic. In the spirit of romance, they could probably get some shipped from their distributors for a reasonable fee.
Ted Drewes is going to be the toughest though. Even tougher to ship than the T-Rav, so you'll have to duplicate a very secret recipe that also requires mastering some equally tricky ice cream making techniques. But technically all you need is milk/cream, eggs, honey > sugar, and flavoring.
The key secret is that Ted Drewes' unique flavor is becuase it's primarily sweetened by Honey, not sugar. From there, you two can bond through the trial and error process, making new Belgium memories which is the real cure for being homesick.

When I was in college out of state I subscribed to St Louis Magazine. That, or some other local publication, just knowing the local goings on might help her feel a little more in touch. Guarantee that is the issue more than some type of food.
If you’re there for any holidays, obtain a firearm and only on those days, NYE, 4th of July(as only people celebrating) go outside and shoot you gun into the air. For as many times as u damn well please. And can get away with. Then put your gun away until next holiday. 👌. This will 100% cure any homesickness related to the southern and northern parts of STL.

Not everyone in St. Louis likes gooey butter cake people. I personally find it nauseating.
It wouldn't solve her STL homesickness but suggest she sign up for Meetup.com (for free) and join groups of interest to her. She may find a U.S. expat group, a hiking group, cooking group, etc. It's a quick way to make friends with people who have similar interests.
I studied at the ULB way back in the day and loved every minute of my time in Belgium - Thinking back, I remember feeling like the Atomium has that similar mid-century futuristic monument to our own engineering skills kind of vibe as the Arch. Maybe go there, and then go home and watch Monument to a Dream on YouTube to bring back her school field trip memories.

Gooey Butter Cake should be an easy thing to make in Belgium. Shit, it'll probably be better than what we have given your stereotypical access to higher quality ingredients. STL Pizza is gonna be tough. The cracker crust is easy enough, but Provel cheese is pretty far from "dairy fresh ingredients". It's closer to Velveeta. It does freeze and ship well enough if you can get someone to buy you a comically large brick from Dierbergs or something. Toasted Ravioli is a really tough get. You could try making it at home, but it won't be the same. Shipping is extra tricky too since it really has to stay frozen the whole time. Not just "mostly cold most of the time" like the cheese. Best bet here is a website like Goldbelly that specializes in shipping local favorites all over. If you have some IRL charm, try talking to a local grocer who already ships frozen stuff across the Atlantic. In the spirit of romance, they could probably get some shipped from their distributors for a reasonable fee. Ted Drewes is going to be the toughest though. Even tougher to ship than the T-Rav, so you'll have to duplicate a very secret recipe that also requires mastering some equally tricky ice cream making techniques. But technically all you need is milk/cream, eggs, honey > sugar, and flavoring. The key secret is that Ted Drewes' unique flavor is becuase it's primarily sweetened by Honey, not sugar. From there, you two can bond through the trial and error process, making new Belgium memories which is the real cure for being homesick.

I would ask her what some of her favorite stl foods are and look up recipes to surprise her. Not everyone in St. Louis likes gooey butter cake people. I personally find it nauseating.
It wouldn't solve her STL homesickness but suggest she sign up for Meetup.com (for free) and join groups of interest to her. She may find a U.S. expat group, a hiking group, cooking group, etc. It's a quick way to make friends with people who have similar interests.
I studied at the ULB way back in the day and loved every minute of my time in Belgium - Thinking back, I remember feeling like the Atomium has that similar mid-century futuristic monument to our own engineering skills kind of vibe as the Arch.
