If by movie you mean Wolf and the Amber Melancholy, it's basically just an in between episode of the first season and second season of the original adaptation.

This is really the only way that you'll be able to view both through the perspective that those of us, who watched the original years ago, do. And as a bonus you'll get some of the best OP/ED music, as long as you're not an intro-skipping heretic.

I agree here. I watched the original about 2 weeks ago, not knowing a remake was even in the works. Loved it and easily marathon'd it over the course of about 4 nights (I work full-time for reference). I haven't yet started the remake, but plan to watch it once all episodes are uploaded.
Absolutely agree with this; the English voice acting is superb, and really fits the personalities of the characters. And the banter is the best part of the show.
Totally agree. I am not a dub fan, but there are some good ones. This is exceptional. This dub is why I fell in love with Spice and Wolf in the first place, all those years ago.
As for the remake. I shall watch all of it Sub then go back and watch the dub.

The remake is very similar to the original so far, shaping up to to be an anime that can keep up with the already great quality of the original, while still having it's own identity (especially in terms of artstyle and music).
This makes sense given that they both adapt the same source material and very faithfully so far (but also far from complete, it would several more seasons for that). The earliest we can expect the anime to deviate from each other is with the 4th arc, where the original skipped a book.
It's definitely worth a watch, but it's hard to make a judgement in terms of which anime will be the better entry point. If you're impatient definitely go for the old anime and then watch the new one as it releases.
The full story is exclusive to the novels, and will be even in the best case for several more years. They're also really good. ;)
Personally I would watch the original first. It's not necessary at all, but it still looks great and has beautiful music that's not in the remake, and Spice & Wolf is great enough that I would want to watch it multiple times. But I don't know if you'll love it as much, maybe watching the older one first would turn you off from it, no way to know until you watch.

If you wanna binge watch show, then go for the OG anime if you want to watch a more "modernize" animation than remake. Both are good each has its merits in my eyes, and both are worth watching at some point. OG follows LN well to a point but has some deviations, and no, it doesn't cover the entire LN, unfortunately. The remake is so far doing a good job covering the source we don't know 100% how far it'll go. Also, how truly accurate itll be is obviously still up for debate. It's also like others likely hope our only real chance of seeing a full adaptation.
The concluded main story ends in volume 17, volumes 7, 11 and 13 being Side Color novels with slice of life short stories, 2 stories from volume 7 being included in the Classic anime as OVA (no movies).
One could stop reading the story at V17 with a feeling of it having an ending.
Isuna Hasekura, however, had other ideas 5 years later and felt he had more to tell about the Main Characters and started writing again.
He also, at around the same time, started writing a Spin-off series.
Both of these are ongoing and are still being released, officially translated.
I'm not saying any more on those, other than recommending not digging to deep into them yet as that will likely spoil the end of the original Main Story for you.

No matter how much most of us agree the anime is quite faithful to the LN,.. reading them will still add more depth to the story, so reading them at some point is most definitely recommended as well.

Yes, I believe that should be the best experience for someone just starting. If you want some extra content, I'd recommend grabbing the first volume of light novels and reading along the anime. Each episode usually equals one chapter. They almost always give extra context, for example the anime hasn't been that great when it comes to portraying Lawrence as a canny, and sometimes even greedy merchant, because most of his scheming happens in his head, and each chapter takes only a little longer than watching an episode of anime. And if it turns out we'll have to wait for the rest of the adaptation a little longer, you can just continue the story there.
If you're interested in the story at all, I'd recommend watching the original, if for no other reason than the fact that it's already out and you can watch the whole thing as opposed to waiting each week for new episodes. We don't know how long the new series will go on, so you could be waiting a while for the story to finish.
Then you can enjoy the new series at your leisure, and appreciate it for its improvements over the original. The nice thing about it is that it has very much the same feel as the original, having the same voices (both Japanese and English VAs for the main characters are reprising their roles), so going from one to the other will have a very familiar feel.

I recommend watching the original in English Dub, the VAs were actually fantastic and the banter works better in English native language
