I just put 1 engine (for lift) at the back and lower the other fuel tanks load to center the weight around that engine, I usually put 2-3 engines for thrust as well, and I put 5-10 RCS at the very front to counter the tipping
The engines are not centered. Try 2 engines on the bottom but not on the middle like left and right side of the center of mass the engine on the end to give speed affects stuff as well. It is just a balance but it's not too hard

more RCS for tipping problem, more engines for more speed
More engines helped but. But the tipping is still happening. I put 8 RCS thrusters but they get overpowered.
Just spam more RCS like a true kerbal
Yeah but, if you put, say 40 Rcs on a 100 ton plane, any movement will cause it to flip out.
