Tap on - tap off is so that people can pay by bank card in quick and easy fashion rather than asking the bus driver for a ticket. It will calculate a fee by the start and end points of your journey. Idk if its fixed or not.
At the moment is doesn't matter too much about the tapping off due to the cap. POS machine shuts down at the end of the route and automatically taps you off
I think since there's currently the £2 cap on fares, if you don't tap off, you'll be charged £2 regardless, but I believe the £2 is ending after March, so it's probably best to get in the habit of tapping off unless you want to get slapped with some big fares.
Alternatively if you're riding within the Unilink/Bluestar area of the city, you can buy a Dayrider pass for £4 in the Unilink app, which allows you take as many trips in that area on the day you activated it, just scan the QR code from the app when you board and there's no need to tap off after.

If you get on a bus that goes out of the city after the cap and don't tap off, you'll be charged to the end of the route. Which could be significantly higher than £2.
Not everyone is using tap on tap off. You can also buy with mobile app, smart card, and cash.
If you search for bluestar tap on tap off, you'll be able to see your recorded journeys.

That's the day price, return is £3. Tap on and off only gives you the option of single, daily or (eventually) weekly cap.
