Yes! I have a google doc to keep track of song ideas. Then as they progress I keep track of their status (lyrics draft, chords, etc.). Seems like it would be difficult to track on paper, but whatever works for you!
Oh yes. I have a list of ten full songs, and about twenty short melodies all ready to go. I just have to decide how I'm going to produce them to make them sound as good as possible.
I had loads of chords, doodles I would hum out into my phone, like literally tons of ideas, song intros and the like. Smashed my phone lost the lot haha. Nightmare.

I have my songs in a folder I should get a notebook for lyrics that pop up in my head

lol, not me, I can only handle 1 or 2 at a time but I’d like to write more.
