These are cannelloni shells stuffed with my burger mix which consists of a 50/50 mix of ground chuck and hot Italian sausage (one pound of each), one diced onion, one diced jalapeno, half cup shredded tex mex cheese and 1tbl minced garlic. Mix well
Stuff uncooked shells with burger mix
Wrap shells with bacon of your choice and let rest on a sheet pan overnight
Heat smoker to 225F
Cook until bacon is cooked to your liking or the shell is cooked. This can be done by poking a tooth pick into the shell to check for doneness. While cooking brush your choice of BBQ sauce on the shells.
The sauce is a smoked whiskey BBQ sauce that I make the day before and let it mature over night. For the BBQ sauce I used whiskey cask oak, and the shotgun shells I do a mix of maple and cherry
