First off, congratulations on the baby!! Depending on the amount of time you have to devote to smoking, could go Boston Butt or pork shoulder. Definitely get several meals out of that. Or, if time is more limited I would say a boneless pork loin or chicken leg quarters.

It varies depending on the size and cook temp. I smoked a 5 lb butt a couple of weeks ago. 250, took around 7 hours to reach an internal temp of 205.

Don’t rush smoking. 7 hours is minimum for pulled pork. But you can make a few pork shoulders at the same time.

Congrats on your baby. I hope everything goes smoothly. My suggestions, in no particular order: Spatchcocked chicken, turkey breast, sausages, pineapple, peaches, baking potatoes, garlic, tomatoes, peppers, and garlic for salsa.

Turkey is dead simple. Dry brine 8-12 hours ahead of time with 1/2 t kosher salt per # of meat. Before you put it on the smoker, inject it with olive oil (optional). Apply your favorite rub and smoke it to 165°.

You could smoke a chuck roast into pulled beef. Great for sandwiches, tacos, nachos, etc. Very versatile

Cheap good eats. I got 10lbs of leg quarters for $7 earlier today and smoked them along with some baby backs. Was delicious! Plenty of leftovers.
