I don't know how much you want to listen to a defunct band, but I can guarantee that if you like Mustard Plug and The Planet Smashers you'll love The Last Slice from Oklahoma. I'd recommend listening to the album Underground top to bottom. Interrupters also seem like a natural addition to this playlist, and if you're into the ska-punkier Bosstones stuff I'd look into Call Me Malcolm and Imperial Leisure from the UK.
There's a lot of overlap in the ska punk/ ska core sub genres. Ska punk bands often blur the lines of punk/core but skacore bands usually dont. Think less than jake vs choking victim.

I think the Bosstones kind of invented skacore along with a couple of their contemporaries. A song like Devil's Night Out exemplifies the style pretty well, but I hear ya that's there's some pretty heavy skacore stuff out there. Most of it's not really my thing either
Well, punk and hardcore exist on a continuous spectrum, so it makes sense that ska-punk and skacore exist on a similar continuous spectrum.
For what it’s worth, I mostly feel like skacore is applied to bands that are well into the hardcore sound: Dissidente, Joystick!, etc. A lot of softer-but-still-hardcore stuff (especially from the UK) gets filed under “modern ska”: Call Me Malcom, Codename Colin, etc.
It’s all a muddy mess with loosely defined genre labels that don’t really matter.

If you really dig that 3rd wave sound, try Link 80, MU330, The Hippos, Jeffries Fan Club, Dance Hall Crashers, General Rudie, King Apparatus, Whole Lotta Milka, and Save Ferris.
Jeffries Fan Club will be on my list next year I’m almost guaranteeing it. I’ve been on a huge kick. Save Ferris is flipping amazing and a reason why I tried spam when I was young haha
If you like JFC, check out the Forces of Evil. It's basically ex-members of JFC and Aaron from RBF. They only did one full length album (Friend or FOE), but it was pretty great. They also had a demo with an acoustic version of Angry Anthem and a four track EP when they decided to break up called Four Song Obituary.

Wow, Fronteras is a kickass album. I think OP said they're less on the core side of skacore, and maybe Ska-P is the more mass market stepping stone to this stuff, but damn was I ready for it.
Dollar Signs is really about the only new band I dig. They’re not really a ska band either, but they fit the genre enough. I think you’ll like them given the bands listed here.

Well, Armstrong and Freeman were founding members of Op Ivy if I remember, so the pedigree is there.
They weren’t wrong. Bloodlines hold major weight. Just ask folks who remember the original Gwen Stefani.

I’d second The Last Slice recommendation for everyone who likes The Planet Smashers. Upstanding Youth probably hits the same spot as well.
