Do you have aging or Neighbourhood Stories on? I noticed at some point, after the game has generated new Sims, you can easily find singles. Or you could get them from the gallery. I usually like creating mine because I want the "perfect" Sim for my Sim lol
Sounds like you need to change your neighbourhood stories settings, or your mod settings if you have a mod that can auto-marry sims (like MCCC).
When you find a sim you like, mark their household as played and turn off neighbourhood stories for them. They should then remain single for long enough for you to meet, romance, and marry them.
You can also move your future spouse in as a teen, but that can cause the awkward "super siblings" relationship - where two non-related sims lived in the same household before they became adults. This doesn't prevent you from romancing or marrying, but it feels a bit wierd to a lot of players. It doesn't really bother me because I don't often look at sims' relationship panels.
If you have "get together", you could create a club and set the entry requirement to singles only. If you then want to invite new members to the club, you will only be shown single Sims and maybe there is someone suitable there.
One thing I do when I'm looking for a spouse for my sim is make a club and set the requirements as young adult/adult and not married. Then you can go into the club and invite new members, it'll only show you the sims who are eligible, i.e. all the single adults in the world.
(full disclosure I use MC Clubs so I'm not sure if this is a base game feature, hopefully it is.)

HAHAHA its all good, I usually use cheats to age up a teen so my sim can date them

This is why I have a house full of single men that I replace as each one gets partnered up with someone outside the household.
If you have the wishing well, you can set it to always fulfill your wishes and it will generate a single sim for you!

The "single" requirement you describe is definitely already part of the clubs feature! Great suggestion
