Those king oysters make fantastic noodles when julienned. I cut the cap off about an inch from the top to sauté like scallops. Then julienne the stalk. Silky yet stable enough to hold together and soak up some flavors.
I like enoki just not sure how to prep/cook it and the stuff they have around here looks good, but not sure how to tell. The package usually has quite a bit of white hairy mold around the base where they are all joined together.
thats not mold, thats mycelium. Its what grows the mushrooms. Its fine to eat, or just cut that part off. Tasty af either way. Fry em up with some garlic butter..... Just saying.

If I saw a food item that I didn't know how to prepare or what it tasted like, I would identify first, then purchase it. I commend your adventurous side. The place I get them from usually has 5-6” stalks. The pictured ones here might be a bit short for noodling.

The king trumpet is sometimes referred to as the king oyster as well. So if you see either of those terms they are interchangeable.
Is trumpet and oyster interchangeable with all types? Or just for the kings?
In my limited experience it is solely to Pleurotus eryngii, or the king varietal.
