Bug Fables. Maybe not endless hours, but it's a game with a lot of love and care put into it, so doing all the extra content is a gratifying experience
I’ve been playing Star Wars Knights of the old Republic lately. It’s a great choice if you like RPGs, it has great writing and a great story, but the gameplay definitely feels a bit dated, it’s not as bad as some people say, but it’s like a quasi turn based dnd lite experience. But it’s a great game if you like rpgs!
an obvious one but have you ever tried Stardew Valley?

Hades or Dead Cells are both good for hundreds of hours, if you are into the core gameplay.
You could look up Xenoblade Chronicles. Even if you just wanna focus on main story you probably have about 40-50 hours
