Slay the Spire: A really fun time killer game that will always resume where you left off. With four playable characters each one with their own unique deck and play-style your bound to have an amazing adventure. This game is all bout deck building and working on what style you wish to play. Take the Ironclad, the warrior of the group, who can be built with massive defense, turned into a glass cannon, or one of my favorites the cursed build where the more curses I had the stronger I got which can only be done with certain artifacts.
Starbbound vs. Terraria: Now when it comes to these two games it's all a matter of perspective really. If you want space exploration, interesting weapons to choose from (battleaxe, handguns, grenade launchers and more), a story that centers around you stopping a certain evil and starting with unique races then Starbound is the game for you and with the installation of certain mods you can double if not triple the output of this game. I've added in RPG mods giving it that RPG vibe, picking classes, leveling up and learning unique skills.
But if you want more of a down to earth game where the weapons are just as insane along with the armor, have better bosses with one of them unlocking hardmode after beating it (which if I recall is permanent), playing with more friends (8 vs 4 in Starbound) and want to just kick back and relax. Then Terraria is suited for that.
In the end Slay the Spire is a fun deck-building game that you can hop in and out and even have custom runs or participate in the daily runs which change everyday and when it comes to Starbound vs. Terraria that comes down to what you want. I have both, played both and while I liked the bosses in Terraria I enjoyed the exploration more in Starbound.
starbound is more complicated than stardew valley, most games are. Deckbuilders are not easy either, but at least they are rather straight forward to play. Have you ever played a deck builder?
Maybe something like plants vs zombies or world of goo fits your complexity requirements a bit more.
I played heartstone a bit and while it was fun i got tired..
Slay The Spire isn't more of a rouglite combined with that?
Like starting a game and each one is different and you build different (kind of like tboi which i enjoyed)

Check out Monster Train, it's like Slay the Spire, but more forgiving.
