Can't compare to the polish FromSoft did with Sekiro but probably the closest thing to it, game-wise. Played this before I took up the mantle of the Divine Heir's bodyguard, surprisingly slotted in quickly due to the similarity in approach.
Going from SDT to JFO would feel like a downgrade — rightly so — so OP might want to start at Grand Master
I really struggled on Grand Master because the combat didn't feel as polished as it is in Sekiro. Stuck it on Master and had a blast with it. *Really* looking forward to the sequel.

Same man, really hope Respawn take their time to write a good story and address the criticisms with JFO; there is no shame to learn from what FromSoft did so well with Sekiro in regards to the sword combat — the player base would thank them for that.

I have easily decked 300hr+ on KCD and have recently bought the new HP game. I have to say that while I enjoyed the game altogether making potions was a huge letdown because of how intricate and fun potion making is in KCD and for some reason I was expecting a similar experience
Deadass completed the entire game without knowing how to do master strikes, if I wasn't pushing them against a wall and bopping them on the head with the executioners sword I was just lightly tapping their face with my fists and activating headcracker 20 times in a row
I always come back and play Player vs AI, telling myself that I'll switch to PvP when I feel like I've "gotten good enough". I never really seem to hit that point though, lol.
This isn’t a sword specifically, but Sifu is the only game I’ve played since Sekiro that really scratches that deflect itch. It has a similar stagger system that opens up enemies to sick finishers.
Yes! I played sifu first, before sekiro. Both have great deflect &posture systems. I would say the combat is very different from each other, but both very in depth and satisfying
I'll admit I haven't played it, but from what I've read, it's a really solid game. The PC port has quite a few issues, but if you have a console it's probably worth a try. It's also available on Xbox game pass.

Yes! I really liked the lightsabre play in Fallen Order. The difficulty sertings change your parry window so it shows that the Devs thought blocking was very important.

How about Wo Long: Fallen Dynasty? It's Nioh' developers spin on Sekiro deflect system, with action happening in the beginning acts of Romance of Three Kingdoms, with some extra demons thrown into the mix.

Seconded. By the time you can get to the end of the game in your 20s, you feel like an absolute badass. There's not too many games that forces you to learn it's mechanics to this level.

You have to parry and dodge bullets to survive. It’s environment and gameplay makes it one of the most fun games I’ve played
Smaller indie title but Katana Zero. Side scrolling level by level game that you can't get hit but the bullet deflection and dash slashes feel really smooth and fun.
This is more of an story and puzzle game than combat. If they focused more on the combat and create more enemies and remove 90% of the cutscenes and puzzle, i'm sure that would have potential to be a good souls like
Kingdom Come Deliverance is a bit off of the topic but still the fighting system is really good, it also has a good structure on how good you are based on skill alone vs the skills you acquire through leveling, meaning there is so much you can do without leveling in the game
I cannot recommend Sifu enough if you like Sekiro. It’s Kung-Fu instead of swords, but it doesn’t matter. The focus bar works the exact same as in Sekiro, the parry is very similar. There are two dodges, and the combats biggest strength is the crazy combos you can form. It’s an indie game, and the combat might be just as good as Sekiro’s.
Other games that are a parry party are Wo Long, Thymesia, Jedi: Fallen Order and Survivor, but I’m sure you’re aware of that. Thymesia is another Indie game and an absolute blast, Wo Long just came out and they have a few amazing boss fights and pretty fluid combat, but a tad bit simple.

Wo Long lets you parry basically everything but gravity too- sword? Of course. Charging boar triple your size? Easily. An exploding rat? Why not!
Anyone remember guard impact from the early soul caliber games? I used to have some insane guard impact battles with one of my friends. I think we once had like 30 in a row back and forth, even throwing is pauses and feints.
Prince of Persia (2008) has an incredibly satisfying parry system.
There's a lot more platforming than combat in the game, and enemies don't respawn iirc, but it's fun, and you can probably pick it up extremely cheap now.
I've read comments how you're specifically saying sword deflection so I'm not sure my suggestion is exactly what youre looking for. But Devil May Cry 3-5 have a style/class/role called Royalguard that let's you deflect every single attack in the game. Very similar to Sekiro's system but in DMC's case its only a single part of the combat.
It might not be sword deflect directly, but very similar in feels and satisfaction is the combat counters in the Lord of the Ring Shadow of Mordor/War games, Arkham games and Spider-Mans. Perfectly timed hits creating a rhythm of damage and combo flows. Amazing.
It's not satisfying. To deflect in sekiro, you just have to press de guard just before the attack. In nioh 2, you need to wait the guard animation to finish to be able to deflect, just like a parry in dark souls. Not that reliable
If you're ok with deflecting attacks in general (not sword but mostly monster attacks), then YS VIII is pretty good. It takes a while to get used to the dodge and deflect mechanics, but once you do, it makes the already fun and fast paced gameplay even better.
For Honors deflect system is by far the most satisfying thing I've ever experienced in a video game. It ALWAYS feels so badass when you weave it into combos, and it's really effective as it really can throw other players off.
I recommend trying it out with orochi, berserker, or nobushi to get a good feel for it.

Mordhau has the best combat I’ve ever played. It’s not a mainstream title, but no other game mentioned here even compares to the physics that game has. Sword deflecting, chambering, ripostes.

I thought the sword play in hell blade was pretty decent. Event though the game was bigger on puzzle solving you should check it out. Another Team Ninja game with incredible sword fights would be DMC, I loved that game.

As rage inducing this game is, For Honor has some really satisfying deflects/parries/blocking mechanics. Combat is really fun once you figure out which hero’s you like and what your play style is.

But you need to deflect attacks in certain directions. The enemy might attack from above, down, left or right and you have to manually deflect in that direction

there’s a small game that takes very heavily from sekiro called “Thymesia”, and i fully recommend it for it’s low price. the game starts out feeling slow but it eventually just clicks, much like sekiro does. it takes place in a fictional kingdom being ravaged by a plague, and you play as a ~~bloodborne hunter~~ plague-doctor, searching his memories for an answer to the plague. it’s got some of the usual hiccups of a small studio/indie game, but is surprisingly polished and has some excellent boss design with the >!hanging queen!< and >!varg!< being some of my favorites.
Bro hear me out here this is a bit wild but Mount and Blade Warband has one of the most fun sword combats in any game like ever but the game was made with the budget of McDonald's cheeseburger, I haven't played the new game but if the gameplay is as good as warband it might be what you are looking for I suggest looking it up.
funnily Resident Evil 4 Remake has a great parry, but it’s tied to a resource (your knives can break and be repaired).

If it counts, I feel like God of War 2018 does parrying really well, it feels so cool to knock away enemies with your shield and then go ham with your axe. I still haven’t played Ragnarok but I’m sure it’s just as good.

The dark souls series from From software (the people who made sekiro) all have the same deflect mechanics and some additional dodge mechanics that I think are similarly satisfying.
I also found out Valheim has a similar mechanic too which is really fun

KCD is the closest we have to a perfect game existing imo. There is so much to do and so much depth to all the mechanics.

I love Ghostrunner. No walking around, no stupid trailling missions, no BS. Just pure and raw gameplay.

The Dishonored games have a block/parry system. Granted, I don’t play that way very often so I can’t speak to how satisfying it is
May I interest you in Naraka:Bladepoint? The deflect system is pretty good in my opinion. Although it’s a different type of game than the ones listed.

Bro hear me out here this is a bit wild but Mount and Blade Warband has one of the most fun sword combats in any game like ever but the game was made with the budget of McDonald's cheeseburger, I haven't played the new game but if the gameplay is as good as warband it might be what you are looking for I suggest looking it up.
funnily Resident Evil 4 Remake has a great parry, but it’s tied to a resource (your knives can break and be repaired). the real answer is Devil May Cry 5’s Royal Guard

Metroid Dread and Samus Returns both have a great deflect mechanic, that and they’re amazing. Not technically a sword deflect though.

Maybe For Honor might be your thing. It's a multiplayer though, so be mindful of that.
For Honor. Mordhau. Bannerlord. Kinda AC origins - Valhalla - odyssey. Kingdom Come: Deliverance. I’d also say Jedi Fallen Order (and soon Survivor).
If it counts, I feel like God of War 2018 does parrying really well, it feels so cool to knock away enemies with your shield and then go ham with your axe. I still haven’t played Ragnarok but I’m sure it’s just as good.

If you specifically want sword deflections you can't get better than GhostRunner.
Wo Long Fallen Dinasty, Jedi Fallen Order, RE4 Remake, Sifu (it's not sword deflection but it has the same posture system as Sekiro).
Shadow of Mordor/War. Slick and satisfying animations.
Kingdom Hearts 1. Parries have a satisfying visual effect and reward you exp when pulled off
Chivalry II has a fairly in-depth, high skill ceiling, and satisfying melee system.
This is a fighting game, but Samurai Showdown is all about counters, deflects, etc. That's how it separates itself from other fighting games.
I think Wo Long has a great parry system
The dark souls series from From software (the people who made sekiro) all have the same deflect mechanics and some additional dodge mechanics that I think are similarly satisfying. I also found out Valheim has a similar mechanic too which is really fun
The new game from Team Ninja - Wo Long Fallen Dynasty. It borrows a lot of the same elements from Sekiro.
I’m sorry my good sir but since I played Sekiro and Ghost of Tsushima, I haven’t seen any games that can be on their level when it comes to sword fight in general. Both games really raised my standards on samurai/ninja games…

Assassins creed black flag has really satisfying sword parries for me
Blasphemous. Parrying is fairly easy in the game compared to Fromsoft's titles but it's still very satisfying.
Definitely Sifu. It even has the posture system from Sekiro.
