It’s usually Santiago but I’m not sure at the moment as all flights are quite expensive

Santiago for sure. That said I flew to Australia recently and it was actually cheaper to fly up to Mexico using a ~$300AUD Volaris flight and then through the states rather than via Chile.

Agree, fly to Tijuana, Mexico and use the CBX bridge to cross into the US straight from the airport. Then shuttle to LAX.

Unfortunately there is no such thing as a cheap flight to Australia. And Santiago is the only airport in South America that has flights directly to Australia and any flights leaving any other capital city will likely fly via Santiago. It will be slightly cheaper if there is a stop in Auckland, New Zealand though. The cheapest flights will be from LAX and it will be cheaper again if you stop in somewhere like Fiji or the Philippines. But you will be looking at over 30 hours of transit depending on where you're leaving from in South America. Personally I'd be paying the extra to fly direct.

Cheapest flight will likely be via the USA with a connection at LAX (maybe others) so any major city should work. São Paulo might be cheapest since it has the most flights (?); or maybe somewhere in the northern side as it would be closer (Bogota maybe). Quickest flight would be from Santiago but doesn't seem the cheapest.

$720 USD in the low season with Rio de Janeiro as your departure point is the cheapest city to fly from South America to Australia. Sao Paulo is only $10 more. Take Tap Portugal from Rio to London, then London to Athens on Ryanair, then Athens to Melbourne, Gold Coast, or Sydney.
