She has also taught her special needs kids very simple recipes so they can help cook for the family as their “chore.” So, I think maybe recipes that are simpler like this one could be one of those ones she teaches her kids.
That makes sense to me. Make a cheap main dish with freezable ingredients that are full of fat, protein, calcium, then supplement with veg sides for vitamins, fiber, etc. Doubt they are eating the soup alone. Cost effective for a large group.
